Many farms use pesticides, insecticides, or other chemicals to deter harmful forces from hurting precious coffee.

Don Pablo thinks differently.​

Instead of using chemicals that are potentially harmful to you or the environment, Don Pablo favors alternate methods to promote coffee growth.

To organically fertilize the soil, these farmers engage in vermiculture – which is the process of having worms decompose organic food waste. Along with the vermiculture process, the pulp from coffee cherries (cascara) is used as fertilizer.

Insects do not thrive at the elevation in the Marcala region, so insecticides aren’t needed. If bugs ever do become a problem, natural insect deterrents like peppers are planted.

When we tasted this coffee, flavors of honey and chocolate dominated most of the cup. Underneath the cocoa, there are remnants of Dulce de Leche and hazelnut.

This is a low acidity coffee. Instead of fruity, intense flavors, Subtle Earth boasts a mild flavor profile.

Volcanica Bolivia Peaberry Organic – Medium Roast

The Bolivia Peaberry blend comes from another country where volcanoes are a normal occurrence. The peaberry is an atypical form of a coffee bean, present in about 5% of all the harvested beans worldwide.

In which only one of the two seeds present inside the cherry are fertilized, creating a pea-shaped bean. The difference with the same region beans is that as the two seeds are differently shaped and end up developing slightly different characteristics. It is also necessary to roast them in a specific way as they aren’t flat and won’t take the heat as evenly as a normally-shaped coffee bean.

The Bolivia Peaberry from Volcanica is another high altitude, grown on volcanic soil, blend from the Carnavari variety produced in Bolivia. It is fully organic too. As a peaberry the taste is not precisely the one you would expect from a typical Bolivian coffee. Bolivia Peaberry is very much cocoa-ish, with a sweet aroma and hint of flowers.

It has a rich cup, with a complex acidity and a syrupy mouthfeel. The floral tones are underlined by lemon undertones and a long, chocolatey, finish. The Volcanica Bolivia Peaberry is grown at one of the highest altitudes worldwide, 8500 feet. This particularity alone makes the Bolivia Peaberry very intriguing for coffee lovers, without taking into consideration the objective cup qualities that this blend possesses.

Colombian coffees have roller coaster tasting and flavor profiles. You’ll experience a vast array of dark cacao and sweet, tart fruits in almost any Colombian Coffee.

You’ll experience an array of floral and chocolate notes with this coffee. At the front of the palate, you’ll notice hibiscus and allspice. As one continues to taste, the flavor will evolve into dark chocolate with a pecan finish.

Even though the flavors are intense, this coffee has a mild acidity.

Mild acidity can be boring if the flavors aren’t bold enough. However, boring is not how you would describe Java Planet’s Colombian.

This coffee is aggressive and boisterous. The best word to describe it is “BIG.”

Their coffee isn’t alright – it’s good. Really good. It’s hard not to fall in love with a business that makes good products while treating all stakeholders with dignity.

The good people at Kicking Horse believe that “organic means not compromising.” They state that organic coffee means “smart farming, planning for tomorrow, and not sacrificing the future.”​

The Smart Ass Blend is made up of coffee from three different regions: Africa, Central America, and South America.​

These regions have a rich climate for growing coffee, and they also have high yields of Arabica coffee (which is the highest quality strand of the coffee plant).​

The coffee has a mild acidity.​

If you were to brew this at lower temperatures, the acidity would be more prominent. We brewed this using an aeropress at around 205 degrees Fahrenheit. The aeropress immersion method of brewing yielded a drink with mild acidity.​

Overall, the cup was balanced. It had a brightness at the front end that faded into a pleasant amount of acidity.​

Smart Ass has a light body with a mild, bright mouthfeel.

Similar to the acidity, the body doesn’t overwhelm the beverage. At the end of the brew, one is rewarded with a balanced cup of Joe.​

Sure, Death Wish could pump out a bad tasting, super caffeinated product, but they don’t. They swear by the tasty benefits of organic beans.

This coffee exudes a full body of taste that never overpowers the drinker.
